2013 Coonawarra Cabernet Sauvignon

The History

The winery is named after a mountain in a Calabrian mountain range in Southern Italy, called Petra Cappa. In this mountain range their Italian grandparents fled for their lives in the war. It is a symbol of life, fulfilment and opportunity that they want to bring into the winery and the wines.

Winemaking/Viticulture

These grapes were harvested in the cool of the night from the vineyard once the fruit had reached it’s optimum flavour level.They were then crushed into a tank and cold soaked for 48 hours.The must was then fermented at temperatures between 22- 25 degrees .

The ferment was then pressed off skins once sugar dry and racked to barrel.The wine spent 18 months in French and American oak barrels. 

Tasting Note

This Coonawarra Cabernet is rich on the nose and palate in plum , mulberry, dark cherries and finishes with balanced cedar oak and mint.The tannins are velvet and silky which gives the wine an elegant finish.
