2012 Sangiovese

The History

Cappa Stone Wine originates from the Calabrian mountains which is an icon in Southern Italy. In the mountain’s cave their Italian grandparents fled for their lives during the war time.

It symbolizes life, fulfilment and opportunity.We have utilised this experience to produce wines that are made
for all to enjoy. 

Winemaking/Viticulture

The Sangiovese grapes were harvested in the cool of the night from the vineyard once the fruit had reached it’s optimum flavour level. They were transported into bins and taken back to the Winery where they were then crushed into a tank and cold soaked for 48 hours in an open fermenter.The must was then fermented at temperatures between 22-25 degrees. 10 percent of the juice was run off to help concentrate tannins and flavour.The ferment was then pressed off skins with the basket press once sugar dry and racked to barrel.The wine spent 15 months in French oak barrels . 

Tasting Note

Our Clare Valley Sangiovese is rich in plums, blackberries, blackcherry and raspberry flavours that finishes with earthy tones and vanillan oak.The tannins are balanced and elegant. It has a length and depth in flavour that will not leave you disappointed.

Sangiovese is traditionally grown in central Italy.
